How can I charge out items linked directly to GL accounts?

You can create product types (see Utilities - Types, Stock Types) and set the 'Sales Account' to the required GL account number.

Then add a new stock item (or items) via Add or Maintain a Part/Product.
Set the product type to the newly created stock type.
Set the 'Non-Diminishing' flag to yes.

When you enter a new sales order (see Entering a New Sales Order) simply add the new stock item to the order and enter the quantity and sell price as required.

When the invoice is created and posted to the GL (see GENERAL LEDGER UPDATE) the sales of this item will be posted to the specified GL account rather than the default sales account as specified in the Utilities - Module: Inventory screen.
