Select this option to copy the quote to a sales order (Entering a New Sales Order).
If the quote expired you will have to maintain the quote expiry date first, this is a security measure.
A new sales order is created, a message is displayed telling you the order reference number and any action you must take now. Typically you must maintain each line item and specify how the stock is to be supplied, ie: whether it is to be supplied from stock or backorder.
The quote is closed after it has been copied to an order.
